Stupid Easy and Delicious Baked Sweet Potatoes

I LOVE baked sweet potatoes!  I will eat them without a thing on them, lightly salted, covered in butter, soaked in brown sugar and marshmallow.  Pretty much however a sweet potato is served I’m game!  That being said Texas Roadhouse consistently has one of the best baked sweet potatoes I’ve ever eaten.  It’s perfectly baked every time.

I have no idea how Texas Roadhouse does this, but I have found a way to imitate it at home!  This method is so simple that I struggle even calling it a recipe.  If you’re like me and you love a good baked sweet potato this will make your life a whole lot easier!

Ok so now that you understand my love for sweet potatoes, I’ll explain my love for a good crock pot recipe which is still high but slightly less than my love for sweet potatoes.  Many people whip out their crock pot as the weather gets cooler, but I may actually be the old ball here as I love my crock pot all year and likely use it more when the weather is warm.  My living room and kitchen has two story ceilings and my oven, especially if running for a long time really heats up this room so in the summer, I love that I don’t have to contend with this if I use my crock pot.

To make baked sweet potatoes in your crock pot simply wash up your potatoes and put them in the crock pot and turn it on low for 5-6 hours or longer if you have potatoes stacked two rows deep.  Yep!  That’s literally it!  No drying the potatoes, no salting the skins or rubbing oil on the outside.  Just put the potatoes in and turn it on.  So SIMPLE and delicious.  I often make 3-5 potatoes in the crock pot this way and can do three without stacking in a second row, but if I add a fourth or fifth potato I simply stack and leave them on a little longer or turn them up to high for an hour at the end.

The finished product is a soft, sweet, fall out of the skin potato that’s ready to eat or have prepped for lunches all week like I commonly use them for.  I also prep these as a dinner side with a quick meal on weeknights.  A tip that I have learned from doing these for a while now is that if I can easily slide my fork into the potato before taking it out of the crock pot it is likely done and ready to eat!
